Start with 2 grams matcha and 60 to 70 ml water.

Technique Notes

  1. Always sift to remove clumps.
  2. Keep water below boiling.
  3. Whisk from the wrist, not the shoulder.
  4. Stop as soon as microfoam appears.

Common Mistakes

  • Using boiling water
  • Skipping the sifter
  • Whisking too slowly
  • Letting matcha sit too long before drinking
